  • 4 cloves garlic (smashed)
  • 1 cup beef or vegetable broth
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper (to taste)
  • 1/2 cup fresh mint leaves (finely chopped)
  • 1/4 cup flat-leaf parsley (finely chopped)
  • 2 garlic cloves (minced)
  • Lemon zest

Instructions

  1. Season the lamb shoulder generously with salt, pepper, rosemary, and thyme.
  2. Heat olive oil in a Dutch oven or slow cooker on sauté mode. Add sliced onion and smashed garlic; cook until softened.
  3. Place the seasoned lamb in the pot, pour in broth, and mix well.
  4. Cover and slow cook on low heat for 6-8 hours until tender.
  5. Meanwhile, combine chopped mint, parsley, minced garlic, and lemon zest for gremolata; refrigerate until serving.
  6. Once cooked, let the lamb rest briefly before slicing and serve topped with gremolata.
