Ingredients
- 4 chicken thighs or breasts
- 2 tbsp olive oil
- 800 g potatoes
- 400 g baby carrots
- 250 ml chicken broth
- 200 ml heavy cream
- 2 tbsp butter
- 2 garlic cloves, minced
- 1 tsp paprika
- 1 tsp Dijon mustard
- 1 tsp dried thyme
- 1 tsp parsley
- 1 tsp oregano
- 50 g butter (for mashed potatoes)
- 100 ml warm milk
- Salt & pepper
- Salt & nutmeg (for mashed potatoes)
- 1 tbsp honey or brown sugar (for glazed carrots)
Instructions
- Season chicken with paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown. Remove and set aside.
- In the same skillet, melt butter and sauté minced garlic until fragrant. Pour in chicken broth and heavy cream; stir in Dijon mustard, thyme, parsley, and oregano. Let simmer until creamy, then return the chicken to cook through.
- Boil peeled potatoes until soft (about 20 minutes), then mash with butter and warm milk; season with salt and nutmeg.
- Steam baby carrots until tender (about 10 minutes). In a small saucepan, melt butter with honey or brown sugar; toss steamed carrots in the glaze.
