  • 4 chicken thighs or breasts
  • 2 tbsp olive oil
  • 800 g potatoes
  • 400 g baby carrots
  • 250 ml chicken broth
  • 200 ml heavy cream
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme
  • 1 tsp parsley
  • 1 tsp oregano
  • 50 g butter (for mashed potatoes)
  • 100 ml warm milk
  • Salt & pepper
  • Salt & nutmeg (for mashed potatoes)
  • 1 tbsp honey or brown sugar (for glazed carrots)

Instructions

  1. Season chicken with paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown. Remove and set aside.
  2. In the same skillet, melt butter and sauté minced garlic until fragrant. Pour in chicken broth and heavy cream; stir in Dijon mustard, thyme, parsley, and oregano. Let simmer until creamy, then return the chicken to cook through.
  3. Boil peeled potatoes until soft (about 20 minutes), then mash with butter and warm milk; season with salt and nutmeg.
  4. Steam baby carrots until tender (about 10 minutes). In a small saucepan, melt butter with honey or brown sugar; toss steamed carrots in the glaze.
  5. Serve by plating the mashed potatoes alongside glazed carrots topped with herb cream chicken.
