  • 4 cups all-purpose flour (plus more for dusting)
  • 1/2 cup warm water (110°F or 43°C)
  • 1/2 cup warm milk
  • 1/4 cup granulated sugar
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1 1/2 tsp salt
  • 3 tbsp unsalted butter, melted
  • 1 cup (2 sticks) unsalted butter, cold
  • 1 cup semi-sweet chocolate chips or chocolate batons
  • 1 egg
  • 1 tbsp milk

Instructions

  1. Activate the yeast by mixing warm water, warm milk, sugar, and yeast in a bowl. Let sit until foamy (5–10 minutes).
  2. In a large bowl, combine flour and salt. Add melted butter and activated yeast mixture. Knead until smooth for about 5–7 minutes.
  3. Shape dough into a disk, wrap in plastic wrap, and chill for at least 1 hour.
  4. Prepare the butter block by flattening cold butter between parchment paper into a square.
  5. Roll chilled dough into a square and place butter block diagonally on top. Fold dough corners over to seal.
  6. Roll out into a rectangle, fold like a letter, chill for 30 minutes; repeat this process two more times.
  7. Roll final dough into a large rectangle about 1/4 inch thick. Cut into rectangles and fill each with chocolate chips before rolling tightly.
  8. Place on parchment-lined baking sheet to rise for about 1.5–2 hours.
  9. Brush with egg wash (beaten egg mixed with milk) before baking at preheated oven (400°F or 200°C) for approximately 15–18 minutes until golden brown.
