- 1 cup couscous
- 1 cup boiling water
- 1 1/2 tsp canola oil
- 1 1/2 cups red onion, minced
- 1 lb ground turkey
- 1 tsp lemon pepper seasoning
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 cups swiss chard, finely chopped
- Juice from 1 lemon
Instructions
- Preheat the oven to 425°F (220°C).
- In a mixing bowl, toss diced butternut squash with canola oil, nutmeg, cinnamon, maple syrup, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
- Prepare couscous by adding it to boiling water in a saucepan; cover and let sit for 5 minutes before fluffing.
- In a skillet, heat canola oil over medium heat and sauté minced onion until translucent. Add ground turkey and cook until browned, stirring in lemon pepper seasoning, paprika, garlic powder, onion powder, salt, and black pepper.
