- 2 tablespoons avocado oil, divided
- 1.5 lbs boneless, skinless chicken breasts, diced
- 1 small red onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small head broccoli, cut into small florets
- 1 (20 oz) can pineapple chunks
- ¼ cup pineapple juice, reserved from the can
- ¼ cup rice apple vinegar
- ⅓ cup soy sauce (or tamari for gluten-free)
- 1 ½ teaspoons sesame oil
- 2 tablespoons arrowroot powder (or cornstarch)
- Sesame seeds
- Cooked rice, for serving
Instructions
- Heat 1 tablespoon of avocado oil in a large pan or wok over medium-high heat. Add diced chicken and cook until browned and fully cooked, then remove from the pan.
- In the same pan, add remaining avocado oil and stir-fry diced red onion, red bell pepper, yellow bell pepper, and broccoli until tender-crisp.
- Whisk together pineapple juice, rice apple vinegar, soy sauce (or tamari), sesame oil, and arrowroot powder until smooth.
- Return chicken and pineapple chunks to the pan. Pour sauce over all ingredients and stir well. Cook until the sauce thickens.
- Serve hot over cooked rice and garnish with sesame seeds.
