  • ¾ cup whole wheat or gluten-free flour
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp coconut oil or unsalted butter, melted and cooled slightly
  • 1 large egg, room temperature
  • 1 tsp almond extract
  • ¼ cup pure maple syrup, room temperature
  • 6 tbsp unsweetened vanilla almond milk, room temperature
  • ½ cup diced peaches

Instructions

  1. In a medium bowl, whisk together dry ingredients: oats, flour, cinnamon, baking powder, nutmeg, and salt.
  2. In another bowl, mix wet ingredients: melted coconut oil (or butter), egg, almond extract, maple syrup, and almond milk until well combined.
  3. Gradually stir dry ingredients into wet mixture until just combined. Fold in diced peaches. Chill dough for 30 minutes.
  4. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
  5. Drop rounded scoops of dough onto the baking sheet and flatten slightly (the cookies won't spread).
  6. Bake for 9-12 minutes until lightly golden around the edges. Allow cooling on the pan for 10 minutes before transferring to a wire rack.
