  • 1 cup diced ripe peaches (about 12 peaches)
  • 1 large egg
  • ⅓ cup honey
  • ⅓ cup plain Greek yogurt
  • ¼ cup milk (dairy or plant-based)
  • ¼ cup melted coconut or vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a muffin tin.
  2. In a medium bowl, whisk together dry ingredients: flour, baking soda, baking powder, cinnamon, and salt.
  3. In a large bowl, mix wet ingredients: egg, honey, Greek yogurt, milk, oil, and vanilla until smooth.
  4. Gradually add dry mixture to wet mixture; stir until just combined.
  5. Gently fold in diced peaches.
  6. Fill muffin cups about ¾ full with batter.
  7. Bake for 18–22 minutes until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.
