  • 1 ½ pounds boneless skinless chicken breasts (cut into 1-inch cubes)
  • 1 red bell pepper (diced)
  • 1 orange bell pepper (diced)
  • 1 cup pineapple chunks
  • 1 green bell pepper (diced)
  • 1 red onion (diced)
  • ⅓ cup ketchup
  • ⅓ cup soy sauce
  • ⅓ cup brown sugar
  • ¼ cup pineapple juice
  • 2 teaspoons sesame oil
  • 1 teaspoon minced fresh ginger
  • 3 cloves garlic (minced)
  • 1 teaspoon sriracha
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a bowl or bag, mix marinade ingredients; set aside half for veggies.
  2. Coat chicken in remaining marinade and refrigerate for 30 minutes to 4 hours.
  3. Preheat grill to medium-high heat (400°F).
  4. Toss veggies in reserved marinade.
  5. Thread chicken and veggies onto skewers alternately.
  6. Grill for 12-16 minutes, turning frequently and basting with leftover marinade until chicken reaches an internal temperature of 165°F.
