  • 1 pound ground turkey
  • 4 medium potatoes
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat a large skillet over medium heat.
  2. Peel and dice the potatoes into small cubes. Add olive oil to the skillet and swirl to coat.
  3. Add diced potatoes to the skillet and cook for about 8–10 minutes, stirring occasionally until softened and golden brown. Remove from skillet and set aside.
  4. In the same skillet, add chopped onion and minced garlic; sauté for about 3–4 minutes until translucent.
  5. Add ground turkey, breaking it up as it cooks for about 6–8 minutes until fully cooked.
  6. Mix in dried thyme, paprika, salt, and black pepper.
  7. Return cooked potatoes to the skillet along with chicken broth; stir to combine.
  8. Reduce heat to low, cover, and simmer for about 5 minutes to meld flavors.
  9. Stir in chopped fresh parsley before serving.
