Ingredients
- 250g ground beef
- 1 tbsp soy sauce
- 1 tbsp hoisin sauce (or teriyaki sauce)
- 1 garlic clove, minced
- 1 zucchini, sliced
- 1 cup broccoli florets
- 1 red bell pepper, diced and sliced
- 1 cup mushrooms, sliced
- 1 cup cooked jasmine or basmati rice
- Olive oil, salt & pepper to taste
Instructions
- In a non-stick skillet over medium heat, heat oil and add minced garlic and ground beef. Cook until browned.
- Stir in soy sauce, hoisin (or teriyaki), and diced red bell pepper. Simmer for about 3-4 minutes.
- In another skillet, heat olive oil over medium-high heat. Add zucchini, broccoli, red bell pepper, and mushrooms. Sauté until tender-crisp (5-7 minutes). Season with salt and pepper.
- Serve warm rice topped with the beef mixture and sautéed veggies.
