  • 4 tortillas
  • 2 zucchini
  • 1 eggplant
  • 3 red peppers
  • 1 red onion
  • 2 cups shredded vegan mozzarella
  • 8 teaspoons BBQ bruschetta spread
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Prepare the vegetables by washing and slicing the zucchini and eggplant into rounds. Salt the eggplant slices and let sit for 10 minutes before patting dry. Slice the red peppers and onion.
  2. Preheat your grill or grill pan to medium-high heat. Brush the vegetables with olive oil, season with salt and pepper, then grill for 4-5 minutes on each side until tender.
  3. Assemble the quesadillas by spreading BBQ bruschetta on one half of each tortilla, adding grilled veggies and vegan mozzarella, then folding in half.
  4. Cook the quesadillas in a heated skillet or griddle brushed with olive oil for about 3-4 minutes on each side until golden brown.
  5. Cut into wedges and serve immediately.
