  • 4 boneless skinless chicken breasts (6 oz each)
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger
  • 1 1/2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp ground cinnamon
  • 1/4 tsp turmeric
  • 1/3 cup chopped fresh cilantro (plus more for serving)
  • Salt and freshly ground black pepper

Instructions

  1. Pound the thicker parts of chicken breasts using a meat mallet for even cooking.
  2. In a bowl, whisk together olive oil, lemon juice, garlic, ginger, cumin, coriander, paprika, cinnamon, turmeric, cilantro, salt (3/4 – 1 tsp), and pepper (1/2 tsp).
  3. Place chicken in a resealable bag and pour the marinade over it. Seal the bag and massage the marinade into the chicken. Refrigerate for at least 2 hours or up to 8 hours.
  4. Preheat grill to medium-high heat (about 425°F).
  5. Grill chicken until cooked through (165°F internal temperature), approximately 4 minutes per side.
  6. Let rest for 5 minutes before serving garnished with cilantro.
