Ingredients

  • ½ cup extra-virgin olive oil
  • ⅔ cup cilantro leaves, chopped
  • Zest and juice of 1 large orange
  • Juice of 4 limes
  • 3 tablespoons fresh mint leaves, chopped
  • 6 cloves garlic, minced
  • 2 (1-pound) beef tenderloins

Instructions

  1. In a mixing bowl, whisk together olive oil, cilantro, orange zest and juice, lime juice, mint, garlic, oregano, cumin, salt, and pepper until well combined.
  2. Place the beef tenderloins in a large resealable plastic bag or shallow dish and pour the marinade over them. Seal tightly and refrigerate overnight.
  3. Preheat your grill to medium-high heat about 30 minutes before cooking.
  4. Remove the beef from the marinade and let excess drip off before placing it on the grill.
  5. Grill for approximately 15 minutes per side or until the internal temperature reaches 135°F for medium rare.
  6. Let the meat rest for at least 10 minutes before slicing against the grain into thick pieces.
