  • 4 ears of corn
  • 1 avocado
  • 1 ½ cups cherry tomatoes
  • ⅓ cup goat cheese
  • ¼ cup red onion
  • Basil leaves
  • Hot honey vinaigrette (honey, oil, apple cider vinegar, cayenne pepper)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Drizzle corn with avocado oil and season with salt and pepper.
  3. Grill corn for about 20 minutes until charred; cool and cut kernels off the cob into a large bowl.
  4. Add halved cherry tomatoes, diced avocado, crumbled goat cheese, red onion, and basil; toss gently.
  5. In a jar or bowl, mix honey, cayenne pepper (or hot sauce), olive oil, vinegar, mustard, garlic powder, salt, and pepper to create the vinaigrette; shake or whisk until combined.
