  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper, to taste
  • 1 cup cooked rice (brown or white)
  • 1 cup corn kernels
  • 1 cup green beans, chopped
  • 1 tsp soy sauce or olive oil
  • Pinch of black pepper
  • 1 cup broccoli florets
  • 1 cup cauliflower florets

Instructions

  1. Preheat your oven to 400°F (200°C). Toss broccoli and cauliflower with olive oil, salt, pepper, and garlic powder. Spread on a baking sheet and roast for 20-25 minutes.
  2. Season chicken breast slices with olive oil, garlic powder, paprika, salt, and pepper. Grill or pan-sear over medium heat for 5-6 minutes per side until cooked through.
  3. In a skillet, sauté corn kernels and chopped green beans in olive oil or soy sauce until tender. Stir in cooked rice and heat through.
  4. Serve the grilled chicken alongside the veggie rice and roasted vegetables.
