  • 1 ¼ cups coconut milk
  • 1 ¼ cups water
  • 1 tablespoon sugar (optional)
  • ½ teaspoon salt
  • 1 avocado, sliced
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh cilantro, chopped
  • Lime wedges, for serving
  • Sesame seeds, for garnish (optional)

Instructions

  1. Marinate chicken breasts in a mixture of olive oil, soy sauce, honey, lime juice, garlic, smoked paprika, ground ginger, salt, and pepper for at least 15 minutes.
  2. Cook jasmine rice by combining it with coconut milk and water in a saucepan; bring to boil and simmer until tender.
  3. Grill marinated chicken and pineapple until cooked through and caramelized.
  4. Assemble bowls with coconut rice as the base and top with sliced chicken and grilled pineapple along with fresh vegetables.
