  • 1 cup basil leaves
  • 1 cup fresh spinach
  • 2 cloves garlic
  • Juice of 2 lemons
  • 1/4 cup olive oil
  • 1/4 cup nuts (cashews recommended)
  • 1/4 cup nutritional yeast
  • 1/2 tsp Himalayan sea salt
  • 2 tbsp apple cider vinegar
  • Optional: 1 can (15 oz) chickpeas, drained and rinsed

Instructions

  1. In a large mixing bowl, combine finely chopped cabbage, diced cucumber, chopped chives, basil leaves, and fresh spinach.
  2. For the dressing, blend garlic, lemon juice, olive oil, nuts, nutritional yeast, sea salt, and apple cider vinegar in a high-speed blender until smooth. Add water if needed to achieve desired consistency.
  3. Pour the dressing over the vegetable mixture and toss until well combined.
  4. Chill the salad in the refrigerator for several hours before serving to enhance flavor.
