Ingredients

  • 1 cup crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 small garlic clove, minced
  • 1/2 cup green olives, pitted and halved
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • Toasted bread or crackers for serving

Instructions

  1. In a food processor, combine feta, garlic, lemon juice, and half the olive oil. Blend until smooth; add more olive oil if needed for desired consistency.
  2. Add half of the green olives and pulse until slightly broken down but still chunky.
  3. Transfer to a serving bowl, drizzle with remaining olive oil, and garnish with oregano, black pepper, parsley, and reserved olives.
  4. Serve with toasted bread or crackers for dipping.
