  • 6 chicken thighs (bone-in, skin-on)
  • ½ cup olive oil
  • 1 lemon (juiced)
  • 4 garlic cloves (minced)
  • 1 medium zucchini (sliced)
  • 1 yellow bell pepper (chopped)
  • ½ large red onion (sliced)
  • 1 pint cherry tomatoes
  • ½ cup kalamata olives (pitted)
  • ¼ cup feta cheese
  • Fresh parsley for garnish

Instructions

  2. Marinate chicken thighs in two-thirds of the marinade for 10-15 minutes.

  4. Nestle marinated chicken among vegetables on the baking sheet. Bake for about 30 minutes.
  5. Add olives and feta cheese; bake for an additional 10-15 minutes until chicken reaches an internal temperature of 165°F.
