  • 2 large egg whites

  • 2 large whole eggs
  • 3 tablespoons white sugar (for filling)
  • 1/2 cup chilled mascarpone cheese
  • 7/8 cup chilled heavy cream
  • 3 tablespoons confectioners' sugar
  • Cocoa powder (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together flour and instant espresso in one bowl. In another, beat egg whites until soft peaks form; gradually add sugar until stiff peaks form.
  3. In a separate bowl, mix egg yolks, whole eggs, and remaining sugar until frothy. Fold in flour mixture followed by whipped egg whites.
  4. Spread batter on the prepared baking sheet and bake for about 8 minutes until golden.
  5. Cool slightly, then roll the cake up in a cocoa-dusted towel to shape it.
  6. To prepare the filling, whip heavy cream with confectioners' sugar and vanilla extract; fold in mascarpone gently.
  7. Unroll the cooled cake, spread filling evenly, and roll back up tightly.
  8. Dust with cocoa powder before serving.
