  • 2 cups pumpkin puree
  • 2 cups sugar
  • 1 cup brown sugar
  • 1 cup oil

Instructions

  1. Preheat your oven to 350°F (175°C). Grease three 8-inch loaf pans or two larger loaf pans.
  2. In a mixing bowl, whisk together gluten-free flour, baking soda, salt, and spices until well combined.
  3. In another bowl, mix eggs, water, pumpkin puree, sugars, and oil until smooth.
  4. Gradually fold the dry mixture into the wet ingredients until just combined; avoid overmixing.
  5. Divide the batter evenly among the prepared loaf pans and bake for about 60 minutes or until a toothpick comes out clean.
  6. Allow to cool in pans for 10 minutes before transferring to wire racks.
