  • 1 Cup Dairy-Free Milk (like coconut milk)
  • 3 tsp Baking Powder
  • 2 Cups Gluten-Free All-Purpose Flour
  • 1 tsp Xanthan Gum
  • 1 tsp Pumpkin Pie Spice
  • 1 tsp Cinnamon
  • ¼ tsp Nutmeg
  • 2 Cups Powdered Sugar
  • 1 ½ tsp Vanilla
  • ½ tsp Cinnamon
  • ½ TBSP Coconut Milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together eggs, sugars, vanilla extract, pumpkin puree, and dairy-free milk until smooth.
  3. In another bowl, combine gluten-free flour, baking powder, xanthan gum, and spices. Gradually add this mix to the wet ingredients until just combined.
  4. Grease a donut pan and fill each mold about two-thirds full with batter using a piping bag or ziplock bag.
  5. Bake for approximately 20 minutes until golden brown; use a toothpick to check doneness.
  6. Allow to cool before glazing. For the glaze, whisk together powdered sugar, vanilla extract, cinnamon, maple extract, and coconut milk until smooth.
