Ingredients
- 1 1/3 cups water
- 1/2 cup honey or maple syrup
- 2 tablespoons molasses
- 2-inch piece of fresh ginger, thinly sliced
- 2 cinnamon sticks
- 1 teaspoon pure vanilla extract
- Ice
- 1/4 cup lemon juice
- 2 tablespoons coffee-flavored syrup or strong brewed coffee
- 2–4 tablespoons heavy cream or coconut cream
- Cinnamon and sugar mixture for rimming the glass
- Mini gingerbread cookies
- Ground cinnamon or nutmeg for dusting
Instructions
- Make the gingerbread syrup by simmering water, honey or maple syrup, molasses, sliced ginger, cinnamon sticks, and vanilla extract for 5 minutes. Strain and cool.
- Rim your glass with a mixture of cinnamon and sugar.
- In a cocktail shaker filled with ice, combine lemon juice, coffee-flavored syrup or brewed coffee, gingerbread syrup, and heavy cream. Shake well until chilled.
- Strain into the prepared glass filled with ice.
- Garnish with ground cinnamon or nutmeg and top with mini gingerbread cookies.
