  • 1/2 tsp ground cloves
  • 165 g unsulphured molasses
  • 360 g sour cream (room temperature)
  • 110 g vegetable oil (e.g., avocado oil or canola oil)
  • 3 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 300 g butter
  • 150 g full-fat cream cheese
  • 550 g powdered sugar
  • 1/2 tsp vanilla paste
  • Mini Gingerbread Cookies

Instructions

  1. Preheat oven to 350°F (175°C) and grease round baking pans.
  2. In a bowl, whisk together dry ingredients: flour, sugar, baking powder, baking soda, salt, and spices.
  3. In another bowl, combine wet ingredients: molasses, sour cream, oil, eggs, and vanilla extract.
  4. Gradually add dry mixture to wet mixture using an electric mixer until just combined.
  5. Divide batter into prepared pans and bake for 30 minutes or until a toothpick comes out clean.
  6. Cool layers before frosting with a mixture of butter, cream cheese, powdered sugar, and vanilla paste.
  7. Assemble the cake by layering with frosting in between and around the cake; decorate with mini gingerbread cookies.
