  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon apple pie spice
  • ¾ teaspoon ground cloves
  • Icing and sprinkles for decorating

Instructions

  1. In a stand mixer fitted with a paddle attachment, beat softened butter with granulated and dark brown sugars until light and fluffy (about 3 minutes). Add in the egg and molasses; mix until incorporated.
  2. In a separate bowl, whisk together flour, ground ginger, cinnamon, and cloves. Gradually add to the wet mixture at low speed until just combined.
  3. Divide the dough in half and roll each portion between parchment paper to about ⅜-inch thick. Stack on a sheet pan, cover with plastic wrap, and refrigerate for at least 2 hours.
  4. Preheat oven to 350°F (175°C). Cut chilled dough into shapes using cookie cutters and place on lined baking sheets.
  5. Bake for 10–12 minutes until edges are lightly darkened. Cool before decorating as desired.
