  • 3.4 lb bone-in lamb shoulder, trimmed
  • Salt & freshly ground black pepper
  • 6 cloves garlic, smashed
  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 300°F (150°C). Season the lamb shoulder generously with salt and pepper.
  2. In a Dutch oven over medium heat, add olive oil and sauté the smashed garlic until golden brown. Remove and set aside.
  3. In the same pot, mix Dijon mustard and honey; coat the seasoned lamb shoulder evenly with this mixture.
  4. Add sautéed garlic back to the pot along with rosemary, thyme, bay leaf, and broth. Nestle the lamb into the flavorful base.
  5. Cover tightly with a lid or foil and cook in the preheated oven for about 3-4 hours until fork-tender.
  6. Once done, let it rest for 15 minutes before slicing and serving warm.
