Ingredients
- 450 g chicken breast
- 200 g mushrooms
- 600 g baby potatoes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 red bell pepper
- Salt & pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 200C (400F).
- In a bowl, toss halved baby potatoes with olive oil, garlic powder, oregano, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden.
- While potatoes roast, heat olive oil in a skillet over medium-high heat. Add cubed chicken; season with salt, pepper, paprika, and Italian herbs. Cook until golden brown.
- Stir in minced garlic, sliced mushrooms, and diced red bell pepper. Cook for another 5-6 minutes until vegetables are tender.
- Garnish with fresh parsley before serving alongside roasted potatoes.
