Ingredients

  • 1 chicken breast, sliced
  • 1 cup cooked jasmine or basmati rice
  • 2 medium carrots, peeled and cut into sticks
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • Salt & pepper, to taste

Instructions

  1. Preheat your oven to 200°C (400°F). Toss carrot sticks in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until caramelized.
  2. Cook rice according to package instructions and keep warm.
  3. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant. Add seasoned chicken slices and cook for about 5-7 minutes until golden brown.
  4. On a plate, layer warm rice as the base, top with garlic butter chicken and roasted carrots. Garnish with chopped scallions and optional drizzle of honey mustard or garlic aioli.
