Ingredients

  • 4 eggs
  • 1 cup diced zucchini
  • 1 cup chopped red bell pepper
  • 1 cup diced onion
  • 2 tbsp crumbled feta or goat cheese
  • Salt & pepper to taste
  • 1 tsp olive oil
  • 1 slice whole grain bread
  • Ripe avocado
  • Everything bagel seasoning (or salt, pepper, chili flakes)
  • 1 cup sliced strawberries
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a non-stick skillet, sauté zucchini, onion, and bell pepper in olive oil for about 3-4 minutes until softened.
  3. In a bowl, whisk together the eggs with salt and pepper. Pour over sautéed veggies in the skillet and sprinkle cheese on top. Bake for 12-15 minutes until set.
  4. Toast whole grain bread until golden brown. Mash the avocado and spread it on the toast; season as desired.
  5. Serve one slice of frittata with half of the avocado toast on a plate alongside fresh strawberries and blueberries.
