  • 10 tablespoons unsalted butter (room temperature)
  • ½ cup granulated sugar
  • 2 cups Fruity PEBBLES™ Cereal (or other fruit-flavored crispy cereal, divided)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 8 large vegan marshmallows

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, sugar, and ½ cup of Fruity PEBBLES™ for about 2-3 minutes until smooth.
  3. Add the egg and vanilla extract; mix until well incorporated.
  4. Stir in flour, baking soda, and salt until combined. Gently fold in 1 cup of Fruity PEBBLES™.
  5. Scoop out dough balls (3-4 tablespoons), flatten them in your palm, place a vegan marshmallow in the center, wrap the dough around it, and roll in remaining cereal.
  6. Place on a lined baking sheet and bake for 8-11 minutes until marshmallows seep through cracks.
  7. Let cool before transferring to a wire rack.
