  • ½ cup granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • ¼ teaspoon ground cinnamon (for filling)
  • 5 large peaches (peeled and diced)
  • 1 teaspoon fresh lemon juice
  • 1 cup powdered sugar
  • ¼ teaspoon almond extract
  • 1 tablespoon milk (more or less for desired consistency)

Instructions

  1. Preheat your oven to 350°F (or adjust based on your baking pan).
  2. Combine the base ingredients (sugar, flour, baking powder, salt, cinnamon) in a bowl and mix in cold butter until crumbly. Press into a greased baking pan.
  3. In another bowl, whisk together egg, sugar for filling, cornstarch, and cinnamon. Gently fold in diced peaches.
  4. Pour peach mixture over the base and bake for about 45 minutes or until golden brown.
  5. Prepare the glaze by whisking powdered sugar with lemon juice and almond extract; add milk to reach desired consistency.
