Ingredients
- 1 whole chicken (3–4 lbs)
- 2 tbsp taco seasoning
- 2 tbsp olive oil
- 8 crispy tostada shells
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- ½ cup sour cream or Greek yogurt
- 1 avocado, sliced
- ¼ cup fresh cilantro
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the chicken under cold water and pat dry. Rub olive oil evenly over the chicken and coat generously with taco seasoning.
- Place the chicken in a roasting pan, breast-side up, and roast for about 1 hour and 15 minutes or until the internal temperature reaches at least 165°F (74°C).
- Let the chicken rest for 10 minutes before shredding into bite-sized pieces.
- Assemble each tostada by layering shredded lettuce, chicken, diced tomatoes, avocado slices, sour cream or Greek yogurt, and garnish with cilantro.
