  • 1 lb large shrimp, deveined
  • 1 cup bell peppers (mixed colors), diced
  • 1 ripe avocado, cubed
  • 2 tbsp lime juice (freshly squeezed)
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp olive oil (extra virgin)
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: wash and chop bell peppers, cube the avocado, and mince the garlic.
  2. In a bowl, mix olive oil, lime juice, minced garlic, cumin, salt, and pepper. Add shrimp and marinate for 15 minutes.
  3. Heat a skillet on medium-high heat with olive oil. Sauté the bell peppers for about 5 minutes until slightly softened.
  4. Add marinated shrimp to the skillet and cook for 3-4 minutes until shrimp are pink and opaque.
