  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 cucumber, shredded (about 1 cup)
  • 1 cup plain Greek yogurt
  • Juice of 1 lemon
  • 2 tbsp fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat grill or oven to medium-high heat (375°F).
  2. Rub chicken breasts with olive oil, garlic powder, salt, and pepper.
  3. Grill chicken for 6-7 minutes per side until the internal temperature reaches 165°F.
  4. In a bowl, combine Greek yogurt, shredded cucumber (squeezed dry), lemon juice, dill, salt, and pepper for tzatziki.
  5. Let the chicken rest for 5 minutes before slicing it into strips.
  6. Assemble bowls with greens, cucumbers, tomatoes, onions, and top with chicken and tzatziki.
