  • 2 lbs organic lamb rib chops
  • 6 garlic cloves
  • 2 sprigs fresh thyme
  • 1/2 cup premium pomegranate juice (for marinade)
  • 1 cup premium pomegranate juice (for sauce)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • sea salt
  • black pepper
  • garlic powder
  • dried parsley
  • cornstarch

Instructions

  1. Pat dry the lamb chops and season generously with sea salt, black pepper, garlic powder, and dried parsley.
  2. Preheat oven to 375°F (190°C).
  3. In a hot cast iron skillet, sear lamb chops for 2-4 minutes on each side until browned.
  4. Add garlic cloves and thyme around the lamb; pour pomegranate juice over it.
  5. Transfer skillet to the oven and cook for 10-15 minutes until the desired doneness is reached.
  6. In a saucepan, melt butter and bring pomegranate juice to a boil; thicken with cornstarch mixture.
  7. Spoon sauce over lamb chops and bake for an additional 5 minutes.
  8. Let rest for 5 minutes before serving.
