  • 2 tablespoons olive oil
  • 1 pound ground turkey
  • 1 small sweet onion
  • 1 cup shredded carrots
  • 3 garlic cloves
  • 1 teaspoon fresh ginger
  • 1 small head cabbage
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • Optional garnishes: green onions, sesame seeds, sriracha mayo

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until nearly done (about 5-6 minutes).
  2. Push turkey to one side; add onion and remaining oil. Cook for 3–4 minutes, then stir in carrots, garlic, and ginger for another 2 minutes.
  3. Add cabbage, soy sauce or tamari, rice vinegar, salt, and pepper; stir well. Cover and cook on medium-low for 12–15 minutes until cabbage is tender.
  4. Remove from heat; stir in toasted sesame oil. Serve over rice or in lettuce wraps, garnished with green onions and sesame seeds.
