Ingredients

  • 2 hard-boiled eggs
  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp fresh chives, chopped
  • Salt & freshly cracked black pepper, to taste

Instructions

  1. Boil the eggs in water for 9-10 minutes. Cool under cold water, then peel and slice in half.
  2. Slice the cucumber into thin rounds and halve the cherry tomatoes.
  3. In a shallow bowl, arrange cucumber slices at the base and add halved cherry tomatoes around them.
  4. Place the sliced hard-boiled eggs on top of the vegetables.
  5. Sprinkle with chopped chives, season with salt and pepper to taste, and serve immediately or chill for later.
