  • 2 tablespoons olive oil
  • 2 pounds ground turkey
  • 1 large yellow onion, chopped
  • 34 garlic cloves, finely chopped
  • 1 bell pepper (any color), chopped
  • 1 jalapeño pepper, chopped
  • 2 tablespoons ground cumin
  • 24 ounces salsa verde
  • 2 cups low-sodium chicken broth
  • 2 cans (15-ounce each) white beans, drained

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add ground turkey and cook until browned, about 5 minutes. Remove and set aside.
  2. In the same pot, add remaining olive oil and sauté onion, garlic, bell pepper, and jalapeño until tender (4-5 minutes). Stir in spices and cook for another 30 seconds.
  3. Return turkey to the pot; add salsa verde, chicken broth, and drained beans. Simmer uncovered for about 45 minutes.
  4. Serve hot with desired toppings such as cilantro, avocado, cheese, or sour cream.
