Ingredients
- 2 tablespoons olive oil
- 2 pounds ground turkey
- 1 large yellow onion, chopped
- 3–4 garlic cloves, finely chopped
- 1 bell pepper (any color), chopped
- 1 jalapeño pepper, chopped
- 2 tablespoons ground cumin
- 24 ounces salsa verde
- 2 cups low-sodium chicken broth
- 2 cans (15-ounce each) white beans, drained
Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add ground turkey and cook until browned, about 5 minutes. Remove and set aside.
- In the same pot, add remaining olive oil and sauté onion, garlic, bell pepper, and jalapeño until tender (4-5 minutes). Stir in spices and cook for another 30 seconds.
- Return turkey to the pot; add salsa verde, chicken broth, and drained beans. Simmer uncovered for about 45 minutes.
- Serve hot with desired toppings such as cilantro, avocado, cheese, or sour cream.
