  • ⅔ cup starchy potato (cubed)

  • ¾ cup flour
  • 2 tbsp vegan butter
  • 2 tsp sage (densely packed)

Instructions

  3. Combine the mashed mixture with salt and flour in a mixing bowl, mixing until a dough forms; adjust flour as needed.
  4. Shape the dough into ropes about ¾ inch thick and cut into bite-sized pieces.
  5. Boil gnocchi in salted water until they float (approximately 2-3 minutes), then remove with a slotted spoon.
  6. In a skillet, melt vegan butter over medium heat, add sage, and sauté for about one minute until fragrant.
