  • 1 lb boneless, skinless chicken thighs
  • 2 tbsp ketchup
  • 3 tbsp agave
  • 4 tbsp rice vinegar
  • 4 tbsp canned pineapple juice
  • 1 tbsp sesame oil
  • 2 tbsp avocado oil
  • 1 tsp minced ginger
  • 4 minced garlic cloves
  • 3 tbsp soy sauce

Instructions

  1. In a medium bowl or zip lock bag, combine ketchup, agave, pineapple juice, rice vinegar, sesame oil, avocado oil, minced ginger, minced garlic, and soy sauce to create the marinade.
  2. Add chicken thighs to the marinade ensuring they are evenly coated. Seal the bag or cover the bowl and refrigerate for at least 3 hours (up to 24 hours) for maximum flavor.
  3. Preheat a cast-iron skillet over medium-high heat. Remove chicken from marinade and cook for 6-8 minutes on each side until fully cooked.
  4. Serve with rice and garnish with chopped parsley.
