- 8 oz medjool dates, roughly chopped
- 1 cup boiling water
- 3/4 cup boiling milk
- 1 tsp baking soda
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 tsp vanilla
- 3 large eggs
- 1 1/4 cup all purpose flour
- 1/2 cup dutch processed cocoa powder
- 1 1/2 tsp baking powder
- 1 tsp salt
- 8 tbsp unsalted butter
- 3/4 cup brown sugar
- 1 cup cream
- 1 cup milk
- 200g dark chocolate
- 1/2 tsp salt
- Optional: 1-2 tbsp cocoa powder
Instructions
- Prepare the dates by soaking chopped medjool dates in boiling water for about 10 minutes until softened.
- In another bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- Cream the softened butter and brown sugar together until smooth. Add vanilla and eggs one at a time.
- Gradually mix in dry ingredients and soaking dates until just combined.
- Preheat oven to 350°F (175°C). Pour batter into a greased baking dish and bake for approximately 25 minutes or until a toothpick comes out clean.
- While baking, melt together butter, brown sugar, cream, milk, dark chocolate, and salt in a saucepan over medium heat to create the toffee sauce.
