  • 8 oz medjool dates, roughly chopped
  • 1 cup boiling water
  • 3/4 cup boiling milk
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 tsp vanilla
  • 3 large eggs
  • 1 1/4 cup all purpose flour
  • 1/2 cup dutch processed cocoa powder
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 8 tbsp unsalted butter
  • 3/4 cup brown sugar
  • 1 cup cream
  • 1 cup milk
  • 200g dark chocolate
  • 1/2 tsp salt
  • Optional: 1-2 tbsp cocoa powder

Instructions

  1. Prepare the dates by soaking chopped medjool dates in boiling water for about 10 minutes until softened.
  2. In another bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. Cream the softened butter and brown sugar together until smooth. Add vanilla and eggs one at a time.
  4. Gradually mix in dry ingredients and soaking dates until just combined.
  5. Preheat oven to 350°F (175°C). Pour batter into a greased baking dish and bake for approximately 25 minutes or until a toothpick comes out clean.
  6. While baking, melt together butter, brown sugar, cream, milk, dark chocolate, and salt in a saucepan over medium heat to create the toffee sauce.
  7. Let the pudding cool slightly before drizzling warm sauce over each slice.
