  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 teaspoon smoked paprika
  • 4 ounces cream cheese (softened)
  • 1 tablespoon ranch seasoning mix
  • 4 ounces shredded cheddar cheese
  • 4 slices turkey bacon (cooked, diced)
  • 2 to 3 scallions (finely sliced)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine softened cream cheese, half of the sliced scallions, and ranch seasoning. Mix well and set aside.
  3. Lightly grease a 9 x 13 baking dish with cooking spray.
  4. Pound chicken breasts to about 1/4-inch thickness and season with salt, pepper, and smoked paprika.
  5. Place seasoned chicken in the baking dish and top each breast with about 2 tablespoons of the cream cheese mixture.
  6. Bake uncovered for 12 minutes.
  7. Remove from oven and sprinkle shredded cheddar cheese and diced turkey bacon on top.
  8. Return to oven; bake for an additional 10-15 minutes until internal temperature reaches 165°F (74°C).
  9. Garnish with remaining scallions before serving.
