  • 2 1/23 cups white whole wheat or all-purpose flour, plus more as needed
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1/4 teaspoon kosher salt
  • 1 cup warm water or warm milk
  • 2 teaspoons honey
  • 7 tablespoons salted butter, at room temperature
  • 1/4 cup granulated sugar
  • 3 teaspoons cinnamon
  • 1/2 cup brown sugar
  • 1 cup powdered sugar
  • 2 tablespoons cream cheese, at room temperature
  • 1 teaspoon pure vanilla extract

Instructions

  1. In a stand mixer bowl, combine 2 1/2 cups flour, yeast, and salt. Add warm water (or milk), honey, and 1 tablespoon butter. Knead for 1–2 minutes until smooth; add more flour as needed.
  2. Cover the bowl and let rise in a warm place for 30 minutes to 1 hour.
  3. Preheat oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  4. Combine granulated sugar and 1 teaspoon cinnamon in a bowl.
  5. Roll out dough into a rectangle (1/4 inch thick). Spread with remaining butter and sprinkle with cinnamon sugar mix. Fold in half and cut into strips; twist each strip into knots.
  6. Melt remaining butter; mix with brown sugar and cinnamon. Spoon over knots before baking.
  7. Bake for about 16–20 minutes until golden brown.
  8. For glaze: Beat powdered sugar, cream cheese, vanilla extract, and water until smooth; drizzle over knots after cooling slightly.
