  • 2 pounds russet potatoes
  • ½ cup unsalted butter
  • ½ cup heavy cream
  • 2 egg yolks
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil (for greasing)

Instructions

  1. Boil the peeled and cubed russet potatoes in salted water until fork-tender (15–20 minutes). Drain and return to pot.
  2. Mash the potatoes until smooth using a potato masher or ricer.
  3. Mix in softened butter, heavy cream, egg yolks, garlic powder, onion powder, salt, and pepper until well combined.
  4. Preheat oven to 400°F (200°C) and grease a baking sheet with olive oil.
  5. Transfer the potato mixture to a piping bag fitted with a star tip; pipe small mounds onto the baking sheet.
  6. Bake for 20–25 minutes or until golden brown on top.
