- 4 pieces uncooked turkey bacon, diced
- 1 small white onion, finely diced
- 1 jalapeno, stemmed, seeded, and diced
- 4 garlic cloves, minced
- 12 ounces beef broth
- 4 cans pinto beans, rinsed and drained
- 1 tablespoon brown sugar
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1 tablespoon fresh lime juice
- 1/4 cup chopped fresh cilantro
Instructions
- Cook turkey bacon in a large sauté pan over medium-high heat until crispy. Remove with a slotted spoon and set aside.
- Reserve some turkey bacon grease in the pan; discard the excess. Sauté onion and jalapeno for about 5 minutes until soft. Add garlic and cook for an additional minute.
- Stir in beef broth, pinto beans, brown sugar, oregano, chili powder, salt, and cumin. Bring to a simmer over medium-low heat for about 15 minutes.
- Stir in reserved turkey bacon and lime juice before serving. Top with fresh cilantro.
