  • 4 pieces uncooked turkey bacon, diced
  • 1 small white onion, finely diced
  • 1 jalapeno, stemmed, seeded, and diced
  • 4 garlic cloves, minced
  • 12 ounces beef broth
  • 4 cans pinto beans, rinsed and drained
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1 tablespoon fresh lime juice
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Cook turkey bacon in a large sauté pan over medium-high heat until crispy. Remove with a slotted spoon and set aside.
  2. Reserve some turkey bacon grease in the pan; discard the excess. Sauté onion and jalapeno for about 5 minutes until soft. Add garlic and cook for an additional minute.
  3. Stir in beef broth, pinto beans, brown sugar, oregano, chili powder, salt, and cumin. Bring to a simmer over medium-low heat for about 15 minutes.
  4. Stir in reserved turkey bacon and lime juice before serving. Top with fresh cilantro.
