Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 (20 oz) can pineapple chunks, drained (reserve juice)
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1 cup chicken broth
  • 2 cups cooked rice

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add bite-sized chicken pieces; cook until browned (6-8 minutes). Remove and set aside.
  3. In the same skillet, sauté chopped onion and bell pepper until softened (3-4 minutes).
  4. In a small bowl, whisk together reserved pineapple juice, soy sauce, brown sugar, cornstarch, and chicken broth.
  5. Pour sauce into the skillet with vegetables; bring to a simmer and stir until thickened.
  6. Add cooked chicken and drained pineapple chunks back into the skillet; mix well.
  7. Serve over cooked rice, garnished with green onions if desired.
