  • 1 can (15 ounces) garbanzo beans/chickpeas
  • 2 1/2 tablespoons olive oil
  • 2 tablespoons tahini
  • 1/2 cup chopped dill pickles
  • 2 tablespoons dill pickle juice
  • 1 tablespoon lemon juice
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 freshly ground black pepper
  • 1/8 teaspoon cumin
  • 2 – 3 tablespoons reserved chickpea water

Instructions

  1. In a blender or food processor, combine chickpeas, olive oil, tahini, chopped dill pickles, dill pickle juice, lemon juice, garlic powder, salt, black pepper, and cumin.
  2. Blend until smooth and creamy. Adjust consistency by adding reserved chickpea water gradually until desired thickness is reached.
  3. Transfer the hummus to an airtight container and refrigerate for at least one hour before serving.
