- ¼ tsp black pepper
- 2 tbsp tahini
- 1 tbsp maple syrup
- 1 tsp Dijon mustard
- 1 tbsp lemon juice

- Preheat your oven to 425°F (220°C).
- On a large baking sheet, combine chickpeas, bell peppers, zucchini, and red onion. Drizzle with olive oil and sprinkle with salt and pepper.
- Roast in the preheated oven for 25-30 minutes until tender and golden brown, stirring halfway through.
- While veggies roast, whisk together tahini, maple syrup, Dijon mustard, lemon juice, salt, and pepper in a bowl until smooth. Adjust consistency with water if needed.
