Ingredients

  • 2 lbs small Yukon Gold or red potatoes
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice (about 1 lemon)
  • 2 tsp Dijon mustard
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. Wash the small potatoes. If larger than golf balls, cut them in half. Place in a large pot covered with cold salted water and bring to a boil over high heat.
  2. Reduce heat and simmer until fork-tender, about 15-20 minutes. Drain well.
  3. In a mixing bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper until combined.
  4. Finely chop the fresh herbs and add them to the dressing; mix well.
  5. While still warm, add the drained potatoes to the bowl with the dressing and herbs. Gently toss until evenly coated.
  6. Let cool at room temperature before refrigerating for at least an hour to allow flavors to meld.
