- 2 lbs small Yukon Gold or red potatoes
- 1/4 cup extra virgin olive oil
- 2 tbsp fresh lemon juice (about 1 lemon)
- 2 tsp Dijon mustard
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh chives, chopped
- Salt and pepper to taste
Instructions
- Wash the small potatoes. If larger than golf balls, cut them in half. Place in a large pot covered with cold salted water and bring to a boil over high heat.
- Reduce heat and simmer until fork-tender, about 15-20 minutes. Drain well.
- In a mixing bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper until combined.
- Finely chop the fresh herbs and add them to the dressing; mix well.
- While still warm, add the drained potatoes to the bowl with the dressing and herbs. Gently toss until evenly coated.
- Let cool at room temperature before refrigerating for at least an hour to allow flavors to meld.
