Ingredients

  • 2 medium beets, trimmed and washed
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup crumbled feta cheese
  • 4 cups mixed greens (spinach, arugula, or kale)
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wrap each beet in aluminum foil and roast in the oven for 45-60 minutes until tender.
  3. Toss diced sweet potatoes with olive oil, salt, and spread on another baking sheet. Roast for the last 25 minutes of the beet roasting time until golden brown.
  4. Once cooled, peel the skins off the beets and cut them into cubes.
  5. In a large bowl, combine mixed greens, roasted beets, sweet potatoes, and feta cheese. Drizzle with olive oil and balsamic vinegar; toss gently to coat.
